Layover Lager Brats


  • 4-8 bratwursts
  • 2-4 pints of Layover Lager
  • 1 stick of butter
  • 2 yellow onions
  • bacon fat or oil of choice
  • 4-8 brat buns
  • grain mustard
  • salt + pepper


  1. Cut onions into large rings or half moons and add to pot on stove over medium-low heat, season with salt and pepper
  2. Add 2-4 Layover Lagers depending on how many brats you are making. 2-3 pints for 4-5 brats, or 3-4 pints for 5-8 brats
  3. Gently nest brats into beer and onions
  4. Heat up bacon fat or oil of choice in a cast iron pan
  5. Add brats to the pan to brown. Be careful to keep the heat low enough to not split the sausages and keep the juices in
  6. Meanwhile, add a stick of butter to your beer and onion bath
  7. If needed, add splashes of beer bath to pan to increase juices
  8. Brown brats on all sides and toast your buns
  9. Spread grain mustard on bun, stuff sausage in the bun, and top with beer onions!
